Il chutney di mango è una preparazione che in qualche modo si può considerare come l’antenato del ketchup: è una salsa di accompagnamento, indispensabile nella cucina indiana, dal sapore agro, per via della presenza dell’aceto, dolce per quella della frutta e anche speziato.

Ingrediente protagonista della ricetta è il mango: il frutto non deve essere troppo maturo altrimenti in cottura potrebbe disfarsi completamente mentre la consistenza ideale è quella che conserva piccoli pezzi.

Tempo di preparazione: 10 minuti

Porzioni: 2 persone

Ingredienti:
1 mango verde (o comunque poco maturo)
2 spicchi di aglio
½ cucchiaino di polvere di peperoncino rosso
½ cucchiaino di sale
1 cucchiaio di zucchero
poca acqua

Preparazione
Tritare/frullare il tutto in un mixer fino a quando la consistenza non sia quella di un purè.

Si mantiene in frigo per 3 o 4 giorni.
